Summer is creeping up really quickly and I am trying to wean myself off of the obvious carbs, sugar, and flour. I have been trying to get creative at dinner time. That seems to be the hardest meal for me to eat without carbs. I recently came across a baked ziti minus the ziti recipe that was really good. Using cauliflower florets instead of the pasta. I also like to mix some goat cheese with the ricotta since ricotta does not have a lot of flavor to it. Crush of red pepper is good too if you like spicy.
