These chicken enchiladas take 10 minutes to make and are absolutely delicious! They are a HUGE hit with all my friends and family. So much so that it has become our Christmas Eve yearly dinner. The recipe does tell you how to make the chicken but I buy a cooked rotisserie chicken at the market and shred it up and use that and it’s absolutely perfect. I usually make a second casserole and freeze one for another night. I also buy one spicy sauce to add in for some kick. I love that it calls for red and green sauce my favorite! Enjoy!!
